In the analyses conducted on whole grain breads, it turns out that one of the samples does not have the appropriate level of fiber.

The result shows a level of only 0.82% or less than 1 gram per 100 grams of product. So, in short, the result is very close to zero, which indicates that the bread is a total fraud. Although there is no official quota set, experts judge that the minimum fiber level should be 6%, or 6 grams per 100 grams of product, which is also considered the European Union standard.

'We are unable, we have failed to verify whether this, except for the parts of the standards that do not say, so what amount of wholemeal flour this bread should have, so what percentage is it for this to be called wholemeal bread or black bread, we do not have these,' said Ana Vuksani, UBT lecturer.

' We saw that a whole grain bread had a very low level of fiber, it is not whole grain bread. Here you are abusing quality. If the diet and people require whole grain bread, you should offer them a whole grain bread ,' said Ilir Pecnikaj, chemist.

' I fail to understand how quality can be abused, because with quality it is the producer himself who directly abuses quality, so I know perfectly well that he is abusing it. Why do you have to make me a very low-quality product and sell it to me as a high-quality product. Here is the problem, I go to buy a wholemeal bread and you offer me a mass-produced bread or one produced with a flour that is only allowed to be produced in a confectionery factory and you sell it to me as wholemeal bread ,' said Ilir Pecnikaj, chemist.

The specific case is an indication that food coloring has been used in the bread and it is not natural. In short, citizens are being deceived and consuming bread with coloring as wholemeal bread. In this case, the consumer not only does not buy a bread that has health benefits, but on the contrary may have health consequences.

' There is no certain percentage of colorings that should be used in bread and additives are among the main causes of cancer in the human body. This is a forgery, it is a fraud that is first committed on the consumer by taking money from their pocket for a product that is not the product they are buying and this in fact, based on the changes to the criminal code in 2019, constitutes a criminal offense ,' said Ana Vuksani, UBT lecturer.

When a wholemeal bread contains only 0.82 grams of fiber, it is clearly below the minimum level of 3 grams/100 g that applies as an EU norm. It seems that the control has not worked or something has failed, causing consequences for the consumer. According to industry analyses in the EU, wholemeal breads on the market usually contain over 6–7 grams of fiber.

' For the sake of truth, we are all here and we have not heard of a business operator being penalized for openly deceiving the consumer ,' said Ana Vuksani, UBT lecturer.

First, fiber is not just a number on the label, but indicates the nutritional structure of the bread, how much of the grain remains in the product, and how much it supports digestive health, sugar control, feelings of fullness, and other metabolic benefits that accompany diets rich in whole grains.

' Additives that are the main culprits for causing cancer, such as the coloring in black bread, today in Albania we do not have laboratory capacities to identify the fact whether this bread, wholemeal or black, is a result of the quality wheat used or as a result of the use of artificial colorings and improvers ,' said Ana Vuksani, UBT lecturer.

' Of course, dyes are used to make the bread look like the breads we used to eat back then that had bran and bran, but they are actually dyes, they have no added value in terms of fiber, which would be provided by wheat that is not milled as well, not sieved as well, it is... most of them are made with additives that only give it that color, the fibers show that they are not at the right height ,' said Sokol Abazi, chemist. /Inside Story
